Paul,

I see that your message is quite old. If you get my reply during the week of October 23, I suggest searching under "Vesuviana" on ebay. I saw one there in case you were interested in bidding on it. Last I saw, the price was around $20 USD.

Like you, have been searching for info on my Vesuviana espresso maker. Did you have any luck on finding info about the machine? If so, can you point me in the right direction?

Thanks.

I am not a listed expert, but my wife and I own a chocolate panning business. The process to chocolate coat coffee beans or anything else is called panning. It's a 3 step process that requires some industrial machinery. You must use an espresso roasted bean. A lighter roast will give you a hard bean and won't crunch very well. You must coat the beans with cocoa powder to get the chocolate to stick to them. Chocolate won't stick to anything oily. Once they are dry you coat them in a chocolate coating pan. This pan is like a big cement mixer that just keeps turning. The chocolate is either sprayed or dripped on the beans. You apply air to dry the melted chocolate at the same time. Most coffee beans are coated 12 or 14 to one. 10 lbs of coffee beans gets 120 to 140 of chocolate. Rolling in the pan is what makes them round, with no flat side. The chocolate must dry for 24 hrs. You then apply a starch based polish and confectioners glaze to seal them from humidity and handling. It takes 4 days to produce a finished product. The initial cost to make your first chocolate bean will be from $25,000 to $40,000 depending on the building you decide to use. Please feel free to post any other questions concerning chocolate coating and I will see if I can get on the expert list. Steve Thompson Amour Chocolates Inc. www.amourchocolates.com
